Biscuit Belly owners are one step closer to home with new Evans restaurant

A new Evans restaurant starring a Southern favorite is bringing its founders one step closer to home.

“I grew up in Athens, and my husband grew up outside Athens,” said Lauren Coulter, who along with her husband, Chad, started Biscuit Belly, which will be opening its Evans location on Oct. 6. “I want to go back to Athens so bad.”

Not only is Evans closer to home than their current Louisville, Kentucky address, it’s the right market for their brand. The Evans Town Centre location at 4274 Washington Road, Suite 2, is the third Georgia location for the restaurant founded in 2019.

“Evans is the typical classic place that has many of our core guests – young families, a great cost of living, a good work force we can pull from,” she said.  

The Coulters have owned other restaurants before Biscuit Belly, but this concept was something Lauren Coulter didn’t think would fly in the Bluegrass state.         

Chad Coulter grew up near a corner store that served “the best biscuits,” she said, and he wanted a restaurant with the familiar flavor of home. When he asked Lauren Colter about it, she wasn’t sure people in Louisville would share his same passion for the downhome fluffy taste he loved.

“People finicky about their biscuits,”’ she said.

 And these aren’t just any biscuits. They are hearty ones stuffed with ingredients such as fried chicken, pimiento cheese, eggs, sausage or simply smothered in gravy. Chad Coulter likes experimenting with flavors, she said. Finding just the right base that could handle such items took years of trial and tweaking.

The recipe was developed by a chef who worked at another one of the restaurants the Coulters owned, and two menu items – The Rockwell and The Rockwell Supreme are named in his honor.

The first Biscuit Belly quickly proved Lauren Coulter wrong in her opinion of her Kentucky neighbors. And she doesn’t mind that at all.

The Coulters are in town this week training employees and getting the restaurant ready to open its doors on Tuesday.

A grand opening is scheduled from 7:30 a.m. to 3 p.m. Friday, Oct. 9 with complimentary drip coffee with purchase, special giveaways and a chance to be among the first 50 customers to win free Biscuit Belly for a year.

But don’t expect multiple Biscuit Belly restaurants popping up over the next several months.

“We can’t put these on every corner,” she said. “We have a scratch-made kitchen. It’s a hard restaurant to run.”

The Evans’ location will be open from 7:30 a.m. to 2 p.m. Monday through Thursday and 7:30 a.m. to 3 p.m. Friday-Sunday.
